STORY: VANNIYA SRIANGURA

From now until June 15, a group of hotels and resorts under Hyatt Thailand are joining forces for a special dining promotion, the Hyatt Thailand Signature Restaurant Week 2023.

Being held for the first time, the event will see top-rated restaurants from seven properties — Park Hyatt Bangkok, Grand Hyatt Erawan Bangkok, Hyatt Regency Bangkok Sukhumvit, Hyatt Regency Hua Hin, Hyatt Regency Samui and Hyatt Regency Phuket as well as Andaz Pattaya Jomtien Beach — collaborate to provide a selection of exclusive dishes and gastronomic experiences during a limited two-week period.

Connoisseurs of Catalan cuisine are promised culinary pleasure from Park Hyatt Bangkok’s Embassy Room, the only progressive Spanish Catalonian restaurant in the city.

The special six-course menu, dubbed “Tradició I Evolució” tasting journey, is crafted by chef Ferran Tadeo and inspired by his family recipes and years of travelling. His signature offerings include bao bun with crab and ajo blanco; Japanese tuna with pot peas and smoked potato; and white asparagus with clams and salsa verde. The price is 3,300 baht per person.

At Grand Hyatt Erawan Bangkok, chef Roberto Parentela of award-winning Salvia Italian Osteria presents Piedmontese and Sardinian culinary roots through the “La Storia Di Spirito Sardo” meal.

The meticulously-structured menu will transport diners to the coastal region of Italy via dishes such as handmade tortelli ravioli with spinach and ricotta cheese filling in truffle cream sauce; squid-ink lorighittas pasta with fresh crab in shellfish sauce; and artisan salsiccia luganega alla griglia served with garlic mashed potatoes and pork jus. Prices are 990 per person for a three-course menu and 1,290 baht per person for a four-course menu.

For Thai food enthusiasts, Market Café by Khao, a partnership project between Hyatt Regency Bangkok Sukhumvit and Michelin-starred Khao Ekkamai, showcases the reimagination of vibrant and complex flavours of Thai cuisine in the “Samrab Gub Khao” menu. Highlighted dishes are smoked Baytong chicken satay with golden bean sauce and the restaurant’s signature lamb shank in massaman curry. Prices are 999 per person for a three-course meal and 1,399 baht per person for a four-course meal.

Should you wish for fine gastronomy amidst a beautiful beach backdrop, head to Hyatt Regency Hua Hin Resort. There, chef Thorthun Puthrussu of McFarland House offers a five-course modern European experience that encompasses dishes such as dashi-marinated Fine de Claire oyster with serrano ham puff and sea urchin mayo; Australian tenderloin steak with girolle mushrooms and balsamic pickled shallot; and pan-seared Hua Hin grouper with white wine potato noisette. The “Gastronomic Excursion” at McFarland House costs 2,500 baht per person.

Newly opened this year, the luxury lifestyle resort Andaz Pattaya Jomtien Beach aims to redefine the dining scene on Thailand’s East Coast with an immersive culinary experience like no other.

At its dynamic restaurant Fish Club, Italian chef Vincenzo Gatt presents a contemporary dinner focusing on fresh seafood cooked to perfection on a coconut husk charcoal grill. Highlighted dishes are such as hamachi yellow tail ceviche and cedar-planked black cod. The five-course is priced at 1,999 baht per person.

Further south, creative Mediterranean cuisine by Italian chef Jacopo Avigo is showcased at Sesun Grill & Beach Bar of Hyatt Regency Koh Samui. The menu combines Mediterranean recipes with local influences. Among the featured dishes are tiger prawn risotto Al Ajillo, crispy yellowfin tuna tartare with avocado cream and smoked Australian beef tartare on sourdough. The four-course “Gustando il Mare” tasting menu costs 1,550 baht per person.

Hyatt Regency Phuket Resort presents a culinary sensation across the best of Latin American cuisine by Colombian chef Miguel Leguizamo.

At its signature restaurant Casa Boho, diners can expect to delight in dishes such as taco de carne with 72-hour braised Angus short rib and beef chuck roast, white onion, coriander leaf, braised consommé and Oaxaca cheese; and house-made churros with a Valrhona Jivara 40% milk chocolate sauce and a sheep milk gelato. The six-course meal is priced at 1,500 baht per person.
