Meanwhile white asparagus is the seasonal highlight at Akira Back restaurant and Goji Kitchen + Bar. Expect to find modern Asian dishes such as white asparagus with black garlic butter, Parmesan and shio gonbu; pan-seared halibut with white asparagus and soy beurre blanc; Japanese A5 Wagyu steak with white asparagus, truffle beef jus and potato chips; and a dessert of mille-feuille with makgeolli (Korean milky sparking rice wine) ice cream and crispy white asparagus caramel at Akira Back. May and June: Plate all-day dining restaurant offers a special duo burger sliders, one is plant-based featuring portobello mushrooms and wasabi on homemade black charcoal bun and the other features deep-fried soft-shell crab with sea grapes and spicy cheese sauce on purple butterfly pea bun. Price is 490 baht per set inclusive of premium Belgian fries. Meanwhile steamed sticky rice with crab meat, priced at 420 baht, is a highlighted dish of the season at Wah Lok Cantonese restaurant. Prices are 1,380 baht per set for two persons inclusive of a pot of tea or coffee; and 1,680 baht per set for two persons inclusive of two glasses of sparkling wine. The French and Italian Riviera-inspired cuisine dinner is complemented with wine pairings by expert sommelier Thanakorn Bottorff. The eight-course carte blanche dinner menu costs 8,500 baht per person. Wine pairing costs 4,200 baht per person. Reservations are a must.

Mandarin Oriental (02-659-9000) May: Japanese restaurant Kinu by Takagi features a special caviar promotion to complement the exquisite multi-course kaiseki lunch and dinner. Premium French black caviar from Sturia are used in dishes such as homemade sesame tofu served with Usui green bean sauce, Hokkaido sea urchin and vintage caviar; Kagoshima Kuruma prawn with vintage caviar in dashi clear soup; steamed abalone served with abalone liver sauce and classic caviar; and charcoal-grilled Tottori Wagyu beef served with classic caviar. Prices are 4,000 baht per person for a five-course lunch and 8,000 baht per person for a 10-course dinner. Reservations are a must. Meanwhile, traditional Thai khao chae set is on offer at The Verandah all-day dining restaurant. The soaked rice centrepiece, from jasmine rice from Yasothon province, comes with right assorted side dishes at 640 baht net per set and 2,250 baht net for a sharing set in a Thai-style tiffin.

May and June: To celebrate Dragon Boat Festival, Shang Palace Chinese restaurant features, until June 5, two special delicacies in a custom-designed premium gift box. Options includes rice dumplings with pork and salted egg and steamed sticky rice with crabmeat. Meanwhile, Chocolate Boutique introduces a new collection of desserts by new executive pastry chef Ajinkya Soundankar. Among the highlights is “cruffin”, a hybrid of croissant and muffin with toppings such as strawberry sesame, pistachio cream cheese, cinnamon sugar and chocolate hazelnut Rocher. Grand Hyatt Erawan (02-254-1234) May: The hotel relaunches its long-established Italian restaurant Spasso now as a Parisian-inspired steakhouse bistro. Served amidst an atmospheric mix of tunes and live music are classic dishes such as Jean Larnaudie foie gras au torchon; Les Frères Marchand AOC cheese platter; bouillabaisse with sea crab; and “La Formule” French entrecote steak in a secret butter-based sauce with hand-cut fries. Dessert selection includes baba gascon with Armagnac; Bourdaloue pear tart; and profiteroles.

May: A “Summery Dream Afternoon Tea — Limited Edition”, a collaboration between executive pastry chef Franck Istel and renowned Thai illustrator Jirayu Koo-Armornpatana, is featured at the Lobby Lounge and Hanuman Bar. The collection of 16 miniature sweet and savoury items in all fun shapes, shades and colours includes lemon basil and strawberry cube; hazelnut pyramid orange almond soft cake; mango raspberry dome and chocolate shortbread; matcha green tea financier and yuzu curd; black truffle choux; Norwegian smoked salmon with wasabi and ikura salmon roe; lobster and prawn canapé on a coral; rosemary shortbread with pumpkin, orange and cream cheese; and caramelised onion and bacon tart with a cloud of shaved manchego cheese. May 29: A collaboration Sunday brunch buffet featuring exquisite Cantonese dishes by executive Chinese chef Cheung Chin Choi of Fei Ya restaurant at Renaissance Bangkok Ratchaprasong Hotel is held at Viu restaurant. The pop-up menu includes Fei Ya’s signature Peking duck roasted over lychee wood accompanied wokfried duck meat in black pepper sauce; jellyfish salad served with shredded cucumber and chilli sesame sauce; king prawn in XO sauce; and sour and spicy Teochew-style wonton. The Cantonese delicacies are offered alongside all-you-can-eat items such as Alaska king crab, Wagyu beef with truffle sauce, sea urchin pasta and a variety of charcuteries and cheeses. Until July: Front Room refined Thai cuisine restaurant introduces new set menu, available for lunch and dinner. Inspired by home-styled cuisine of Thailand’s eastern coast provinces, the menu features local classics such as Chanthaburi’s spicy gaeng pa fish curry; sweet, sour and spicy pork belly stew with garcinia leaves; grilled coconut milk and turmeric cured chicken; and durian panna cotta. Plant-based options are also available.

Dusit Thani, Hua Hin (032-520-009) May and June: After a year-long renovation, the resort reopens with an additional a brand-new beachside restaurant Nómada. The cuisine, by a Chilean head chef, is inspired by South American indigenous cookery. Selection of small plates and tapas includes fresh sea bass and grilled river prawns with Chilean yellow chilli and pebre sauce; rock lobster in Chilean deglazed white wine sauce; ceviche with mango; wonton cones with salmon, soy and sesame oil; shrimp with house-made mayonnaise and crispy quinoa; and crab with avocado brunoise. While its highlighted main courses include grain-fed Angus Tomahawk, beef rib-eye, tenderloin steak, slow-cooked picanha beef, roasted chicken, whole red snapper and Indian Ocean octopus.
